Amaranth is a bushy plant that grows around 5 to 7 feet, with broad leaves and a flower head of small profuse red or magenta flowers. The seed heads resemble corn tassels, the seeds are tiny and are a golden to creamy tan colour.
Amaranth can be cooked as a cereal, ground into flour, popped like popcorn, sprouted, or toasted. The seeds can be cooked with other whole grains, added to stir-fry or to soups and stews as a nutrient dense thickening agent.
Use 1 part Amaranth to 2 parts water, simmer for 35 minutes, leave to stand for 15 minutes.
